Brussels Sprout Salad

Brussels sprouts…. a controversial vegetable. You love them, or you hate them. Many people have traumatic memories of childhood Christmases, being forced to eat overcooked, bitter, soggy sprouts.

But the lovers will tell you, a raw, or roasted sprout can be delicious. And this salad recipe is easy, quick & delicious, & might be able to win over even the biggest of haters!

BRUSSELS SPROUT SALAD

What you need:

Couple of handfuls of Brussels sprouts

Handful of kale

1 red onion

Handful of pumpkin & sunflower seeds

Handful of walnuts

Pomegranate seeds to garnish

For the dressing:

1 teaspoon dijon mustard

1 tablespoon (vegan) mayonnaise

1 teaspoon coconut nectar

1 tablespoon coconut cider vinegar

Juice of 1/2 lemon

HOW TO

Finely chop the sprouts, kale & onion (I did this in the food processor).

Lightly toast the seeds, then stir into the chopped veg.

Crush the walnuts & stir in.

Whisk all the dressing ingredients together, then stir through the salad.

Top with pomegranate seeds.
