Coconut Blueberry Cake

Now we are all back in lockdown, I’m sure some of you have some spare time to indulge in some lockdown baking!

Last weekend my friend Sandra made this delicious Coconut Blueberry Cake.

Here’s the how to:

INGREDIENTS

  • 50 g Three By One Coconut Oil

  • 200 g blueberries

  • 80 g almond flour

  • 30 g Three By One Coconut Sugar

  • 100 g yoghurt (or sub for Three By One Coconut Milk)

  • 2 eggs

PREPARATION

Preheated the oven to 180 ° C.

Melt the coconut oil. 

Mix the eggs, sugar, almond flour and yoghurt with the melted oil.

Spoon in the blueberries. 

Put the batter in a greased baking tin and bake in the oven for 20 minutes.

Remove from oven and let the cake cool down a bit before removing it from the tin.

Enjoy with a cup of tea or a turmeric latte!

You can replace the blueberries with any other berries or fruit of choice so make it seasonal!
